HOW TO REPLENISH SIDEBOARD

PROCEDURE

Prepare Flatware

  • Only replenish clean and shiny flatware to the sideboard
  • Prepare clean and dry side plates, tea cups and saucers
  • Place them in the cabinet the quantities should be at par-stock
  • Check the quality of the chinaware before placing in the sideboard
Replenish Line
  • Unpack napkins and place mats
  • Replenish the table cloth fold it nicely and put them to the sideboard
  • Do not place the condemn linen into the sideboard
  • Napkin and table clothes when see almost empty from the sideboard the person who in charge linen have to to to the linen room asking for some more linen that we wanted.
Ketchup, Tabasco, Chili Sauce, Mustard, Mind Jelly
  • Check all the bottles and caps prior to each service period
Sauce, Worcester-shire sauce, Oil and Vinegar
  • Ensue that there is sufficient quantity [over half of bottle] inside the bottle
  • Tighten the cap prior to service
  • Tooth picks, sugar, pepper, salt & pepper shaker, pot, matches, and napkin
Prepare Silverware
  • Only replenish clean and shiny silverware to the sideboard
  • The quantities will be sufficient
  • Replenish teaspoon, dinner knife, dinner fork, fish knife, fish fork, oyster fork, dessert fork
  • Butter knife and soup spoon and place them into the side station
Prepare Chinaware
  • Prepare clean and dry side plate, Chinese spoons and small sauce dishes
  • Place them in the sideboard
  • Check the quality of the chinaware clearly before placing in the sideboard
Replenish Line
  • Prepare napkins and place mats
  • Replenish them to the sideboard but do not fold
  • do not place the condemn linen into the sideboard
