▎Blueberry Cheesecake Recipe


▎Ingredients


For the Crust:


• 1 ½ cups graham cracker crumbs


• 1/3 cup granulated sugar


• 1/2 cup unsalted butter, melted


For the Cheesecake Filling:


• 16 oz (2 packages) cream cheese, softened


• 3/4 cup granulated sugar


• 1 teaspoon vanilla extract


• 3 large eggs


• 1 cup sour cream


• 1 tablespoon lemon juice


For the Blueberry Topping:


• 2 cups fresh or frozen blueberries


• 1/4 cup granulated sugar (adjust based on sweetness preference)


• 1 tablespoon cornstarch


• 1 tablespoon lemon juice


• 1/2 cup water


▎Instructions


1. Prepare the Crust:


   • Preheat your oven to 325°F (160°C).


   • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.


   • Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.


   • Bake the crust for about 10 minutes, then remove from the oven and let it cool while you prepare the filling.


2. Make the Cheesecake Filling:


   • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.


   • Gradually add the sugar and beat until well combined.


   • Add the vanilla extract and mix in.


   • Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.


   • Add the sour cream and lemon juice, mixing until smooth.


   • Pour the cheesecake filling into the cooled crust and spread it evenly.


3. Bake the Cheesecake:


   • Bake in the preheated oven for about 55-60 minutes, or until the edges are set and the center is slightly jiggly.


   • Turn off the oven and crack the door open, letting the cheesecake cool in the oven for about an hour. This helps prevent cracking.


   • After an hour, remove it from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight for best results.


4. Prepare the Blueberry Topping:


   • In a medium saucepan over medium heat, combine the blueberries, sugar, cornstarch, lemon juice, and water.


   • Cook while stirring gently until the mixture starts to bubble and thicken (about 5-7 minutes). If using frozen blueberries, this may take a little longer.


   • Remove from heat and let it cool slightly.


5. Assemble:


   • Once the cheesecake is fully chilled, pour the blueberry topping over the cheesecake, spreading it evenly.


   • Return to the refrigerator for another hour to set.


6. Serve:


   • Carefully remove the sides of the springform pan.
