SOP023 -How to open and serve white wine and dessert wine

 How to open and serve white wine and dessert wine 



  1. PURPOSE


To make sure that staff know how to open and serve white wine and dessert wine 

Correctly 


  1. PROCEDURE


  1. Take a bottle of red wine


  1. Take out from the fridge or wine cellar with care

  2. Ensure wine serving temperature is correct

  3. Dry white wines: 10C/50F

  4. Sweet white wines: 12.8C/55F

  5. Slowly and carefully


  1. Bring the wine to the guest table


  1. Place a bottle of the wine in an ice bucket fill with ice and water ¾ full

  2. Place a clean white napkin on the top of wine bucket

  3. Hold the wine stand with the ice bucket and then carry it to the table


  1.  Take out the bottle of  white wine from the ice bucket


  1. Using the service napkin 

  2. To wipe and drying the bottle of white wine

  3. Place the bottle of white wine on the napkin

  4. Place half folded napkin on palm of left hand


  1. Check the napkin


  1. Napkin must be clean and un-torn

  2. Napkin must be well pressed


  1. Hold the white wine bottle


  1. Stand bottle with left palm

  2. Ensure it rest firmly on the palm

  3. Bring other half of napkin up the back of the bottle

  4. With right hand

  5. Do not obstruct / cover the label

  6. Hold tip of napkin and neck of bottle

  7. Hold with your right hand

  8. Place bottle neck in between thumb and index finger


3.6    Present the bottle of white wine for approval


3.6.1 Show label to guest (host)

3.6.2 Read the name of the wine and vintage to the guest

3.6.3 “Sir/Madam, Your bottle of Chablis 2002”


 3.7 Put back the bottle into the bucket


3.7.1 Slowly and carefully


3.8 Open wine opener


  1. Open the blade of the wine opener

  2.  Not rusty

  3. It should be sharp and clean


3.9 Hold the neck of bottle


3.9.1 About 0.5 cm down the bottle rim

3.9.2 Knife positioned horizontally to label


3.10 Place knife on foil


3.10.1 About 0.5 cm down the bottle rim

3.10.2 Knife positioned horizontally to label


  3.11 Cut foil


3.11.1 Clockwise completely and anticlockwise again

3.11.2 DO NOT TURN THE BOTTLE


3.12 Remove the foil


3.12.1 Remove the cut foil from the bottle

3.12.2 Gently and slowly

3.12.3 Ensure the foil is cut properly

3.12.4 Place the foil into the ice bucket


3.13 Close the knife


3.13.1 Carefully and gently


    3.14 Wipe the top of the bottle


3.14.1 Rim of the bottle and surroundings with service napkin

3.14.2To remove mold


3.15 Open wine opener/corkscrew


3.15.1 With right hand

3.15.2 Support and grip the opener

3.15.3 Hold the wine opener between thumb and index finger


3.16 Hold the bottle neck


3.16.1 With left hand.

3.16.2 Hold back of bottle neck firmly


3.17 Insert corkscrew


3.17.1 One complete turn before inserting

3.17.2 With right hand, applying force gently

3.17.3 DO NOT PUSH


3.18 Turn corkscrew


3.18.1 With right hand into bottle

3.18.2 Gently and slowly

3.18.3 Do not force or push down

3.18.4 DO NOT TURN THE BOTTLE

3.18.5 Stop when the last spiral completely enters the cork

3.18.6 Grip the bottle neck close to rim for support


3.19 Ease cork upwards


3.19.1 Slowly and gently

3.19.2 Hold the neck firmly

3.19.3 Lift back corkscrew upwards

3.19.4 Stop when corkscrew is ¾ out of bottle
