HOW TO OPEN AND SEVE RED WINE
PROCEDURE
Take A Bottle of Red Wine
- From the bar or wine cellar
- Ensure wine serving temperature is correct
- Young red wine 18.3c / 65f
- Matured red wine 20.5c / 68 to 70f.
- C: Centigrade
- F: Fahrenheit.
- Slowly and Care Fully
Approach Guest with A Bottle of Red Wine
- Ensure correct wine
- Ensure correct vintage
- Cheerful
- Smile and Polite
- "Excuse me, Sir/Madam"
Hold The Bottle of Red Wine
- With palm on left hand
- Bottle neck towards you
- Label facing to the guest
- Right hand side of the guest
- Hold wine on palm of left hand
- Half folded waiter cloth / service clothes beneath the bottle
- Read name of wine and vintage to guest
- " Madam/Sir, here is your Red Wine Pinot Noir 2001
- Open the blade of the wine opener
- Not rusty
- Should be sharp and Clean
- Be careful
Hold The Neck of The Bottle
- Hold with your finger firmly
- With left hand
- Label facing to the guest always
- Ensure bottle upright at all times
Place Knife On Foil
- About 1.5cm down the bottle rim
- Knife positioned horizontally to label
Cut Foil
- To cut the foil follow clockwise completely one round neck of the bottle and anticlockwise again
- Do not turn the bottle
Remove The Foil
- Remove the cut foil from the bottle
- Gently and slowly
- Ensure the foil is cut properly
- Place the foil on the side station first
- Do not through the foil on the floor
Close The Blade of Wine Opener
- Carefully and gently
Wipe The Top of The Bottle
- Rim of the bottle and surroundings with the service napkin
- To remove the mold
Open The Corkscrew
- With right hand and support and grip the opener
- Hold wine opener between thumb and index finger
Hold The Neck Of The Bottle
- To holds the neck of the bottle with left hand firmly
Insert The Corkscrew
- One compete turn before inserting
- With right hand, applying force gently
- Do not push
Turn Wine Opener
- Turn the wine opener with the right hand that we screwed into the bottle of wine by gently and slowly
- Do not force or push down
- Do not turn bottle
- Stop when the las spiral completely enters into the cork
- Grip the bottle neck close to rim for support
Ease Cork Upwards
- Slowly and gently
- Hold the bottle firmly
- Stop when cork screw is 3/4 out of bottle
Remove cork
- Slowly and gently
- Turn cork 180 degrees
- Twirl corkscrew out of cork with right hand and slowly
Present Cork
- Present cork to the guest / host from the right
- Hold cork at the top
- Place it on table near the guest / host
Wipe The Bottle Rim
- Rim and edge of bottle with service napkins
- Remove all traces of deposits or cork fragments
Pouring Wine into Glass
- Small portion at first in the host's glass for tasting
- Do not lift glass
- Gently and Steadily
- Let flow slowly into glass
- Tilt the bottle excessively [ Do not shake ]
Served Wine
- Ladies first / Host last
- Glass not more then half full
- Twist bottle slightly
- Clockwise toward end of each pouring
Put Back The Red Wine Bottle
- Put back on the wine coaster
- Slowly and gently
- Within easy reach of the host
- Place napkin nearby the bottle and nicely folded
- " Madam / Sir, Please enjoy your wine?"
- Clear away the wine cork
