PROCEDURE
Operating Equipment
- To prepare your station you must clean if before you start to set up the equipment on it
- Make sure you have enough operation equipment napkins and condiments before service starts
- Dinner fork, Dinner Knife, Appertizer Fork, Appertizer Knife, Dessort Fork Dessert Knife, Dessert Spoon, BB Knife, BB Place, Dinner Plate, Side Plate, Sugar Bowl, Napkin, Clean clothes, Condiments....
- Prepare sufficient operating equipment
Napkins
- Get the napkins from the linen at basement before service
- Fold the napkin and keep it on each side station
- Make sure napkin must be well pressed no stain, torn, dirty or damaged
Condiments
- Make sure all bottle and container are cleaned
- Clean and refill salt and pepper shakers and mustard fresh pepper mill, sugars and ensure that shakers work properly
- Clean and replace all empty sauce bottles
- Check if you have mustard, black pepper, lea & Perrints sauce and Tabasco sauce
- Arrange and put it by each station before operation
